Indian Cuisine: Kerala Style Prawn Biriyani

PART 1

 Prawn Masala

Ingredients:

  • Oil
  • Curry leaves
  • Onion-4
  • Crystal salt
  • Green chillies-2
  • Ginger
  • Garlic
  • Chilly powder- 1 teaspoon
  • Turmeric Powder- 1/2 teaspoon
  • Garam Masala- 1 teaspoon
  • Coriander powder- 1/2 teaspoon
  • Tomatoes-3 
  • Prawns
  • Coriander leaves
  • Mint leaves



Heat oil in a pan and add curry leaves to it. Then add 4 chopped onions to it. Add 1 tablespoon crystal salt to it. Stir it occasionally.  Add green chillies to it. After a minute of stirring, add finely chopped ginger and garlic. When the onions colour changes to light brown add chilly powder, turmeric powder, garam masala and coriander powder. Stir it well. Keep it for 2 minutes. Add tomatoes to it. Keep it for 3 minutes. Now add prawns to it. Mix it well so that the Masala flavours combines with prawns. Garnish with coriander leaves and mint leaves on top. Cook the masala for around 30 minutes in low flame. Stir at intervals of 8-10 minutes.



PART 2

Biriyani Rice

Ingredients:

  • Jeera rice-2 cups
  • Oil
  • Ghee
  • Onion-1/4
  • Bay leaf
  • Pepper
  • Star Anise
  • Cumin
  • Cloves
  • Cinnamon
  • Cardamom
  • Poppy seeds
  • Turmeric Powder
  • Boiled water-3 cups
  • Lemon-1
  • Crystal salt


Heat oil in a pressure cooker and add ghee to it. Add 1/4 chopped onion to it. Now add bay leaf, pepper, star anise, cumin, cloves, cinnamon, cardamom, poppy seeds and turmeric powder. Mix it well. Now add 2 cups of jeera rice to it. Mix it thoroughly. Add boiled water along with one tablespoon of crystal salt and 1 lemon to it. Close the pressure cooker and put it in high flame and heat it till the first whistle comes. Turn off the pressure cooker and open after the whole pressure goes naturally from the cooker.


PART 3

Garnishing ingredients 

Ingedients:

  • Ghee
  • Onion
  • Dry raisin
  • Cashew nuts




Heat ghee in oil. Add cashew nuts to it. Stir it until it turns light brown colour. Keep it in a separate dry plate. Now and raisins to the Ghee. After becoming golden yellow colour move it to the plate. Now, add 1 finely length wise chopped  onion to it and fry it until it turns brown colour. Keep it aside in a plate along with raisins and cashew nut.



PART 4

Putting Dum on Biriyani




 Ingredients:

  • Rose water
  • Turmeric powder
  • Milk
  • Coriander leaves
  • Mint leaves
  • Garnish mix 
  • Ghee
  • Biriyani rice
  • Prawn Masala


Take a little amount of milk about 20 ml and add little turmeric powder and rose water to it. Keep it aside.




Now take a non stick cooker or big non stick utensil to put Dum. first add little Biryani rice into the cooker. Add prawn masala on top of it. Now add coriander leaves and mint leaves above it. Now at the next layer as Biryani rice. Add the the milk mixture prepared before above it. Also, garnish mixture, coriander and mint leaves on it. Now, the next layer is again prawn masala. Similarly, repeat the above steps again. The final layer is rice. And put the garnish mixture along with ghee, coriander and mint leaves on it. Now close the lid of the cooker and heat in low flame for about 10 to 15 minutes. Add some weight on the lid to tightly enclose the lid.
